Hot Honey Camembert

When you bake camembert it melts BEAUTIFULLY. The texture completely transforms and turns it into the perfect dip.

There are loads of different ways you can serve baked camembert. In the past I’ve added garlic, thyme, chutney, jams – you name it. One of my all-time favourite pairings however is hot honey.

How do you make hot honey?

I make mine by mixing runny honey, chilli flakes and hot sauce. Just honey and chilli flakes will do the trick though – anything to make the honey spicy!

Preparing the camembert

I like to place the camembert in a perfectly sized baking dish, although you can use the box it came in so long as you line it with baking paper. This is important to catch any leakage. From there, score the top and top with the honey.

Baked Camembert with Bagel Chips

Where there’s baked camembert, there has to be some sort of dunking tool. It’s just the rules. Here my dunking tools of choice are Bagel Chips. Bagel chips that I’ve brushed in garlic butter, to be specific (garlic butter is just garlic, melted butter and parsley).

These will cook at a similar rate to the camembert, so I just place it all on the baking tray.

Baked Camembert FAQ

Can I just use regular honey?

Yes, if you don’t like spice just use normal honey.

Can I use brie instead?

Brie has a milder flavour, but it will bake very similarly to camembert.

How do I prevent the camembert from bursting?

There’s a window of opportunity where the camembert will perfectly melt without the sides collapsing, so just be vigilant. If it’s wrapped in baking paper it won’t matter too much if it does leak a little anyway.

Serving Baked Camembert

Dive right in and don’t look back! The camembert will stay gooey for a good 10 or so minutes, potentially longer if it’s in a dish (the residual heat will keep the camembert warmer for longer).

Hot Honey Baked Camembert

Equipment

  • Sharp Knife & Chopping Board
  • Baking Paper
  • Small Baking Dish (for camembert - optional)
  • Large Baking Tray
  • 2 Small Bowls/Ramekins (one for honey, one for garlic butter)
  • Brush

Ingredients 

Camembert

  • 1x 250g/9oz round block of Camembert (see notes)
  • 2 tbsp Honey
  • 1/2 tsp Hot Sauce (I use Cholula)
  • 1/4 tsp Chilli Flakes, or to preference

Bagel Chips

  • 2x Bagels
  • 3 tbsp / 45g Butter, melted
  • 2 tsp very finely diced Fresh Parsley
  • 1 large clove of Garlic, finely grated/diced then mashed into a paste with the side of your knife

Instructions 

  • Preheat the oven to 180C/350F.
  • Unwrap the camembert and place it in a small baking dish lined with baking paper. If you don't have a dish/oven-friendly ramekin where the camembert perfectly fits, just line the box it came in with baking paper and use that. If it didn't come in a box, make a tight parcel with aluminium foil. Anything that will catch leakage. In all cases, if one side of the camembert is more dipped than the other, place it dip-side-up (keeps the honey contained).
  • In a small bowl or ramekin combine the honey, chilli flakes and hot sauce. Score the top of the camembert in a criss-cross pattern. If there is no dip in the camembert, gently press down on the top to create one. Drizzle over the honey then place in the middle of a large baking tray.
  • Slice the bagels in half, then slice into chips around 1/4" thick. Spread out on the baking tray. Combine the melted butter with garlic and parsley then evenly brush over one side of each of the chips.
  • Bake everything in the oven for 12-15 minutes, or until the camembert is gooey right through the centre (you can gently insert a knife through the top to check) and the chips are golden and crisp. The chips will likely be done around 12 minutes and the camembert 15 minutes, so just place the camembert back alone for the extra 3 minutes.
  • Serve up and enjoy!

Notes

a) What to bake the camembert in? - I actually have a tiny cast-iron pan which fits Camembert so perfectly. I like to use something like this because it retains heat and keeps the camembert warmer for longer once out of the oven. It also catches the honey/cheese when it leaks. I find the boxes a little flimsy, but they do a pretty good job, so long as it's lined with baking paper! The camembert will do everything in its power to burst, so you want something to keep it contained.
b) Hot honey - If you don't have hot sauce just use chilli flakes and work to preference. This thins out a lot as the cheese bakes, so just be aware if your Camembert is completely flat on top a lot of it will slide off.
c) Bagel chips - I just use plain bagels since they're getting brushed in garlic butter. For reference, the bagels I use are around 3oz-3.5oz/90-100g each.
d) Garlic - Try and this is fine as you can, just so it's dispersed through the butter and reaches all of the chips.
e) Calories - Whole recipe divided by 4.-
