Garlic Bread Roll Ups

Equipment

  • Non-Stick Pan & Tongs
  • Sharp Knife & Chopping Board
  • Small Pot & Brush (for garlic butter)
  • Bread Knife
  • Rolling Pin

Ingredients

  • 8 slices of Thick Soft White Bread (see notes)
  • 1.5 cups / 150g Mozzarella, shredded
  • 2 tbsp Butter
  • 2 large clove of Garlic
  • 2 tsp finely diced Fresh Parsley

Instructions

  • Peel and finely dice the garlic, then use the blade of your knife to mash/spread it into a paste.
  • Add 2 tbsp butter to a small pot and microwave in very short bursts until melted. Combine with garlic & parsley and place to one side.
  • Slice the crusts off each slice of bread then roll them flat with a rolling pin. Evenly sprinkle over mozzarella, then one by one tightly but carefully roll them up. Leave them seam-side-down so they don't unravel.
  • Liberally brush each roll up with the garlic butter (give it a short blast in the microwave if it has firmed up).
  • Add roll ups to a dry non-stick pan seam-side-down over low-medium heat. Fry until golden all over with the cheese starting to leak out, using your tongs to frequently turn them. You may need to do this in two batches depending on the size of your pan.

Notes

a) Bread - Important to use soft white sandwich bread. Don't use firm bread (like Sourdough) or they won't roll properly. Try and make sure the bread is as fresh as possible, just so it doesn't crack as you roll it. I also recommend staying clear of seeded bread too, otherwise you run the risk of it cracking.
b) Cheese - I use mozzarella because that's the classic option for cheesy garlic bread, but cheddar works just as well. You can use cheese slices, but only if they're thin and pliable, otherwise they're difficult to roll.
c) Garlic - Important to finely dice and mash the garlic. If you just dice it up, you not only run the risk of it burning in the pan, but the flavour's not as well dispersed through the butter.
d) Serving - Great with Tomato Soup and Marinara Dip, or to use wherever you'd usually serve garlic bread (like Spaghetti Bolognese and Lasagne).
e) Calories - Per roll up.
