Spicy Tuna Crunchwraps

Spicy Tuna
- 2x 5oz/145g cans of Tuna, drained
- 1/4 cup / 60g full fat Mayo
- 2 tbsp Sriracha (see notes)
- 1 rib of Celery, finely diced
- 1 large Spring Onion, finely diced
- Salt & Pepper, as needed
Crunchwraps
- 4 large Flour Tortilla Wraps
- 1 cup / 100g Cheddar, grated
- 2 small Avocados, halved, stoned, peeled & finely sliced (1/2 avocado per crunchwrap)
- 1.5oz / 40g Chilli Heatwave Doritos, or as needed (approx 5-6 per chips per crunchwrap)
- 1/2 small head of Iceberg Lettuce, finely sliced (or as needed)
- Salt & Pepper, as needed
In a small mixing bowl combine drained tuna with mayo, sriracha, celery, spring onion and a pinch of salt & pepper (to taste). Place to one side.
Lay out 4 tortilla wraps, then add a pinch of lettuce in the centre of each one. Add tuna, followed by avocado with a pinch of salt & pepper, then the Doritos in a circular shape. Top with cheese, then fold in the outside of the wrap over the centre, making your way around the wrap until the centre is completely covered (see video for guidance).
Working in batches if you need to, place the wrap seam side down in a pan over medium heat. Fry for 3-4mins or until deep golden and crispy, then flip and cook until the other side is golden.
Slice in half and enjoy!
a) Tortilla Wraps - These are typically sold as 10" wraps in the UK. Depending on how pliable they are you might want to consider giving them a quick blitz in the microwave to loosen them up, just so they don't tear when you fold them. In all cases make sure it's flour tortilla wraps, not corn.
b) Doritos - I like using Chilli Heatwave Doritos for an extra kick of spice, but in reality you can use any type of Tortilla Chip!
c) Sriracha/Spiciness - These crunchwraps have a gentle kick of spice, nothing overbearing at all. If you don't have or like sriracha you can sub a different hot sauce, just be aware of the spiciness. Some hot sauces are much spicier than others!
d) Can I make these ahead of time? - I don't recommend making the full crunchwrap ahead of time because they go soggy as they rest. If you want to get ahead of the game you can make the spicy tuna and tightly store in the fridge for a couple of days. Bring to room temp and give it a good stir before you use it.
